I have it set to 720p, but it keeps switching to 480p on standard-def DVDs. It keeps telling me that it's restricted, but I'm using an HDMI connection. What's up with this?

My player does that when I turn it on before switching the TV's input source to the player.

yeah it is kinda quirky, make sure it's powered on after your tv is on the HDMI input channel, that's usually what happens with me to.
