I wish to know if the Playstation 3 can play BLURAY Movies, use HDMI, can handle DD+, Dolby True HD and DTS-HD and can send it by bistream to can decode for the new receiver as ONKYO and finally what profile has already 1.0, 1.1. or 2.0

Anyway, I can answer a few of your questions. It plays Blu-Ray, it can play through HDMI, it can handle DD+ only (I think) and the currently is profile 1.1 with a firmware update.

The PS3 does not bitstream TrueHD, it has to decode it then send PCM via HDMI. It has no support for decoding or bitstreaming DTS-MA.
However, with this you should get the TrueHD quality; all that is happening is that the encoded TrueHD audio is being decoded into the data that is directly converted into an analog signal in your surround processor.
If you want DTS, you'll have to look elsewhere for the moment.Epson Pro 1080UB projector
