I have the PS3 connected to a Panasonic PT-AE900U through a Yamaha RX-V663 and Josh is right, you need to turn off the PS3 setting for auto detech highest resolution or 1080/24p. I think I like having the PS3 output 1080/24p to my projector, but the difference isn't much if anything. I hope there isn't a bug with recent PS3 firmware that defaults to 1080/24p, if you can't get it turned off and stay that way, let me know and I will check mine with firmware ver. 2.42, at least I think that is what I recently downloaded.
